Garden Salad

When making Garden Salad, if some of the ingredients are not available simply replace them with other vegetables or fruit. Pears are a delicious addition to Garden Salad but peaches or nectarines would complement carrots and celery very well. Keep the dressing light by drizzling some olive oil on the salad then a adding a good squeeze of lemon juice. A wedge of fresh wholemeal bread would be a good accompaniment to this salad.

Ingredients:

  • 2 medium carrots
  • stick celery
  • wedge of cucumber
  • 2 medium tomatoes
  • 1 large pear
  • lemon juice
  • olive oil
  • freshly ground black pepper

Cooking instructions:

Grate the carrots, chop the celery, cucumber and tomatoes and cut the pear into thin slices. Put the grated carrot on individual plates. Arrange the celery, cucumber, tomato and pear on top of the carrot. Drizzle a little olive oil and squeeze some lemon juice over the salad and add some freshly ground black pepper.
