The Walker’s Diet: Light Meals
Eating a main meal in the evening and a lighter meal at lunchtime may be out of preference or because of lifestyle. Many of the Light Meals in The Walker’s Diet can be put in a tortilla wrap or sandwich or simply into a lunchbox. It is easy to have a well-balanced lunch at work if you also take some fresh fruit and a yogurt. A handful of nuts and seeds adds even more goodness. Try and eat some raw foods each day. As well as fresh fruit, raw vegetables are fantastic – carrot, cucumber, celery and red and green peppers make appetising crudités. Recipes are for two people so simply adjust the quantities for one or more people.
